Lemon and Lime Posset the quick and easy dessert ideal for dinners at home or dinner parties- your guests would never know these did not contain sugar or were low carb! The only carbs and sugars in this dessert are from the fruit, they are natural sugars and carbs but you still need to know they are there.

This tasty fat bomb turned out so well and much better than my first attempt – practice makes perfect.

This is so simple to make with so few ingredients.

⏱ 15 minutes preparation
⏱ 2-3 hours to chill and set in the fridge

(though easy to turn into 4 or 6 – that will just change your nutritional values below).

1 x lemon
1 x lime
600g extra thick double cream
160g low calorie sugar substitute. I used swerve but you can use xylitol if you don’t have swerve.


  1. Place cream and sugar replacement into a sauce pan.
  2. Peel the lemon and lime and add the zest to the cream mixture.
  3. Turn the heat up to simmer and as it starts to heat stir continuously for 5-7 minutes. With extra thick cream it might appear lumpy but do not worry, keep stirring and and those lumps will dissolve.
  4. Your mixture will start to take on the colour of the zest slightly and begin to form a sort of custard. You are looking for a smooth consistency so keep going.
  5. Once ready (after 5-7 minutes) take the mixture off the heat and add the juice of the lemon and juice of the lime and stir in. It may cuddle a little but keep stirring and it will mix through just fine.
  6. Pour the mixture into a jug via a sieve to strain the zest and any other remains of the fruit.
  7. Pour the mixture into five small dishes and leave to cool and set in the fridge for at least 2-3 hours.
  8. Optional- Serve with fresh berries for added freshness.
