Recipe post: Pork Ball Stroganoff!

Pork ball stroganoff – quick simple, tasty and low carb! You can have this with low carb rice, or just on its own. Perfect for a quick midweek meal.

🕒Cooking time 15-20 minutes
🍴Serves: 4

Ingredients:

  • 300g pork mince or pre-packed meatballs (I used Helen Browning organic pork meatballs)
  • 300ml sour cream (full fat)
  • 100ml chicken stock (optional)
  • 100g spinach
  • 210g mushrooms
  • 1 onion
  • 1/2 leek
  • 1tsp smoked paprika (heaped)
  • 1tsp Worcestershire sauce
  • 1 tbsp butter
  • 1 clove minced garlic
  • Salt and pepper to taste

Method:

  1. Preheat your oven to 200c.
  2. Slice mushrooms, slice leek, dice onion, mince your garlic and wash your spinach.
  3. If using mince make 12 even meatballs, Place your meatballs on a baking tray and place in the oven for 10 minutes.
  4. Add butter to a large pan and add the onion, leeks and mushrooms to the pan.
  5. Sauté for 5-10 minutes and add garlic and optional chicken stock if using. Reduce for 10 minutes to get a thicker consistency.
  6. After 10 minutes get your meatballs out of the oven and add to the pan.
  7. Add sour cream and mix all items together.
  8. Add paprika, Worcestershire sauce, salt and pepper to taste.
  9. Simmer for 10 minutes and allow for the sauce to thicken. The sauce will take on a darker colour as it simmers – this is good!
  10. Add spinach to the sauce and allow to wilt.
  11. Serve in a bowl in its own or with low carb rice.
